One of the goals was to have the new kitchen tie in architecturally to the rest of the house. We replicated

from 1900's to 1940's. Great old fashioned kitchens that stand the test of time. She has great pointers and detailed explanations as well as a wealth of resources listings. She also lives in Oakland California and could probably help you. I would strongly recommend a toe kick (the area under the cabinets

my 1930's kitchen which is very similar to yours. We have painted cabinets (off white) and Carrara marble too. Did this about 5 years ago. Haven't had to reconfigure anything. Just lucky. Have original large double stainless sink and I love our fir subfloor. We were able to refinish 3 times but time to
old 1950's stove daily. It works fine, however I would caution anyone looking at one to consider that they usually have pilots and possibly match lit ovens. Not that either is a problem, just some people feel uncomfortable with it.
