We are in the planning stages of creating a similar "great room" type of space, can you share
hallway in between. The large, open space makes the house feel bigger. An open plan doesn't work for every house, and many people prefer a more formal separation

Your plan to frame the bookcase between two tall elements sounds good. You'll want to be sure the bookcase is not too near the cooktop, to avoid grease
