These floors are hickory. Thanks for asking! Kate
I think they are Hickory. Hickory floors are becoming very popular. They are very hard and durable. We are working on a similar project in California right now. A water based clear polyurethane finish will give you a similar look.

What kind of finish is on the floor? Is it Semi Gloss, matte, or satin
This floor is white oak quarter sawn and rift cut in 2" width to match the original flooring from 1895. I do not know the stain color selected to get the warm brown color- but we reviewed a lot of samples
Rift & Quartered Oak is very beautiful. The rays and flakes of the Quarter Sawn cut are very distinctive. We just sent a 10" wide plank floor to another Houzz user in NJ. Here are some shots.

chairs pushed together are less than 6' and the couch is a loveseat. So you can extrapolate from there. The island could be 3'x9' or larger and the floor space around is generous on the work side...not even necessary except if more than one is cooking.
