for the thickness , I would personally prefer it to be smooth ... The approach with a thinner sheetrock could work . I myself would just have the granite fabricator grind down the thickness of the material and make it exactly what you need.

could stain. The issue with marble/travertine/limestone -- any material that contains calcite -- is not so much staining as it is etching from anything acidic. There is no sealer that prevents against etching. Most fabricators and stone retailers will advise honing the marble, etc. since etching is less
2 - 1/4". The project was completed a number of years ago. We seem to recall that Fox Marble in the Bay Area fabricated this for the client, but are not certain.
