I believe we used 5/4" clear maple treads and risers with a 1" overhang. The rails are custom made stainless steel pipe with cable. The pipe connection is concealed by the tread to give it a clean look. On the side wall, the sheetrock goes right to the edge

Homeowners can and should be able to do whatever they want inside of their homes. Its called freedom of choice. More power to them. Of course when we do jobs as a company, we take full responsibility to build our stairs to code. What a home owner does AFTER we leave is totally up to them.
