Hi Nancy, That sounds like a great design dilemma. You should post it as a discussion and attach photos of the rooms you need
ten foot ceilings in her house, and a carpenter friend did what alwaysdesigning suggested, I believe, and built the wall out from the existing one and down to the height of the cabinet. However, if you don't mind some space above your cabinets, you could always decorate it, or use it to store items that
to the ceiling, or fill in the space by "bumping out" the existing wall over the cabinets as suggested. If your style is the kind where you like to fill empty spaces with interesting things, then the open style could be the way to go. If you didn't want tall cabinets, but these other things don't appeal

sloped/vaulted ceilings... You will not find an "off-the-shelf" island range hood that can accommodate any ceiling other than perfectly flat & level. Unless you're going to have a metal fabricator make a custom chimney for you (time & $$$), this issue would need to be solved not at the hood, but at the ceiling

The soffit only needs to be large enough to accommodate the vertical chimney of the hood (13" x 10.5" on most of our models), but it can be made bigger for visual effect, or to incorporate lighting or other design features. what is the height of the ceiling where the beds begin? I'm wondering if this could begin at under 5 feet...
The ceiling height at the tallest part is 42" from the top of the matress to the header. It is fine for sleeping in and a good use of knee wall space, but they are a little tight for an adult sitting on the bed. The ceilings were covered in leftover wallpaper (hence the different ceilings in the bunks)
Neat way to utilize space with slanted ceilings.
Great idea for bonus room with sloped ceilings.
