I have the same granite and paint color and am not a huge fan of subway tile. I would like a square tile, but it is hard to find.
What brand/model is the hood insert?
Do you remember what hood insert you used above this range? I like how it

I'm remodeling my kitchen and have 3x6 subway tile in staggered placement for the backsplash, then for the medallion, a mosaic tile four rows deep bordering harlequin tiles within the mosaic. is not hardwood it is porcelain tile. This kitchen was a feature story awhile back, look for mid century modern makeover.
If the space feels too narrow, run the tiles across or perpendicular . If you like the way the room leads you through the space run the tiles lengthwise or parallel to the kitchen

I like this tile, don't like white but idea of wine racks above is nice
long tiles laid veritically from doorway in the narrow kitchen--but use dark tile.
