most copper used in these types of applications will not turn green - many have a protective coating and if you keep the copper clean oxidation won't build up. I wouldn't worry about copper turning green in this type of application.

Why is the sink so ridiculously low. It makes a lovely space unlovely. Unless one is about 5' it would be unbearable to use for more than a couple of minutes

Copper is a living finish. it will patina over time. There are polishes that you can use to revive the finish, but it won't look exactly like it does the
