Sushi Take Away ideas

Hi, we will be renovating this space into a Sushi take away restaurant/cafe. do you have any ideas/ suggestions for low budgets. Also any tips on working with the exciting surfaces ( pvc panels, glossy tiles etc)

I love my local sushi place. Lots of shiny tile and modern, really modern lighting, but with very traditional window treatments. Great look. Great food.

By the way, the reason they are my favorite sushi restaurant is that they have the best selection of vegetarian sushi. I don't eat seafood or fish, but I also have many friends who are scared to eat sushi because of the whole raw fish thing until I tell them there is such a thing as veggie sushi. Then they try it and most of them are shocked that they actually enjoy it. I think the veggie sushi is a great way to introduce people who are kind of nervous about it to sushi.
