Need help with the 2nd bathroom

I have put in a new vanity with a composite countertop which also includes the sinks and the back splash. The drywall behind the countertop doesn't meet the backsplash; there is a gap in the middle as the drywall bows away from the countertop.

I have been looking for a large mirror to sit on top of the backsplash to hide the gap, but haven't found one large enough- 40" x 67". So, I can keep looking for a mirror, or I can fix the drywall. Any other suggestions? I thought about tiling above the backsplash don't think the tile above it looks good. Ugh. Just want this project to be over with.

Drywall is relatively easy to 'fix' as a DIY project depending your skill level.
