Need advice with old chimney in kitchen!

We have a 1937 double brick place. There have been various issues with the electrics in the kitchen and looking at renovating the original open fire place area which has a free standing oven. Was wanting to install an extractor fan that is more equipped than the current one or put cabinetry in that space and locate the oven and stove top to the other side of kitchen. Has anyone had the old chimney/stove top in their house and what did they do to remodel and make the space work functionally and to safely
