Good Morning - Without seeing a floor plan, and knowing that you don't want to renovate everything at once, but take this renovation very slowly, I'd start with exactly what you listed in the color choices you enjoy = granite bar, matching backsplash, and hardwood in the kitchen only. Evaluate everything when done for at least a year, and go from there!

It is very hard to advise one way or another. it all depends on your aesthetic preferences and the look you are aiming for. This is a kitchen we did where we removed a wall and replaced it with a breakfast bar and redid the hardwood flooring as well. I hope this helps and gives you some additional ideas.
