What kind of wood for the raised beds?

It's hard to tell because its very weathered, good woods for this application would be red or yellow/white cedar they have a natural toxin that helps fight decay and if you are very fortunate you might be able to find old salvaged railway ties.

When installing a raised bed on decomposed granite are you digging out the DG when planting or adding dirt on top of the DG inside the beds?

If you are growing food, I'd stay away from rail ties, as they have been treated with things you wouldn't want in your diet.
