The wall has deep dark and cave like niches the stone is dark, grayish - I would like to lighten it up and make it more visually appealing. I guess my question is do I change the color of the grout or both the stone and the grout????

It's hard to tell without a picture, but if you decide to paint, or to white-wash, use one of those car washing mits instead of a brush. The mit makes it possible to get into all the nooks and crannies.

Consider battery powered LED light to up light or down light the nitches if you can't get power to these caves.
