That stone is called Chopped Granbury, from the Dallas-Ft. Worth area in Texas. It was laid in a thick mortar joint with a slight 'smear' to try and make it look old. Hope that helps.

Todd, I LOVE this "old" look and am considering doing something similar on our new house project. Here's my question. What happens to a mortar smear over time? Is it thin enough that it would began to crack and fall off? Thanks!
