High ceiling...should we go with flat drywall?

We are in the midst of building and our family room has high cathedral ceiling with exposed white beams. W would love to do tongue and grove but too pricey. W don't live the drop down drywall technique but are builder is recommending it so we don't see all the seams,etc. we would like to go with flat drywall. Any suggestions or recommend stations??? We plan to do white ceilings...
