Would you use butcher block as the primary, or only, countertop material?

I would use Butcher block countertops as an island top, or on counters that are not adjacent to a sink. Remember butcher block is wood, and therefore shouldn't be exposed to water on a continual basis.

Take a look at these butcher block idea books. Most of them have the butcher block at the island, as opposed to throughout the entire kitchen:

Wood countertops are surprisingly durable, but must be finished properly for the anticipated uses. A little care goes a long way, and worth it for the beauty they provide.
