Renovated old house. Dining room has really low ceilings (prob about 6'10" or so). Any paint tricks or design/window treatment tricks I can use to make it appear higher?

Would you consider doing a blue ceiling?

It can give the illusion of height if you do a subtle color.

Very intrigued. Would the crown molding be needed, too?

Hang drapery panels floor to ceiling and paint vertical stripes on walls.

Without seeing the room it's a little hard to say, but the good thing is that if you decide you want them you can always add them later.

You definitely should NOT add crown moulding to a room with the low height that your room has. While it is beautiful in a room with high ceilings, it would only further lower your visual ceiling height.
