Need more storage and counter space. Not sure what to do with the bay window area.

You could definitely utilize that bay window area for additional cabinets and counter space, even if it is an inch or so lower than the rest of the countertops. Would that give you enough without tearing down the wall? Of course, tearing down the wall would open a whole new realm of possibilities to you, the best of which would be the very open look you'd achieve. You would lose the upper cabinets on the kitchen wall, but you could create a large peninsula going into the sunroom space. Plus who knows what else. I can't tell from these two photos.

The kitchen is nine feet wide and sunroom is seven feet wide. I even wondered about putting the sink under the windows. Just not sure about the cabinet flow with the wall down. I am really leaning toward opening the space.

What is the height of the bottom of the windows? Kitchen sinks are typically installed at 36" above the floor, right along with the rest of the countertops. If you are average height or above, a lowered sink could lead to backaches.

Hmmm, we need some input from kitchen designers or builders.

It looks like there is a lot more room where the trash can and pet dishes are. What is to the left of the refrigerator?

The left of the refrigerator is a hallway and the area where the dog dish is would allow for about 6 more feet but is directly across from stairwell to lower level.
