Coating for Brick Floor

We are in the planning stages of remodeling our ktichen. Our kitchen floor is brick, however, we would like to seal the floor then put a clear coat over it so it is smooth and is easier to clean. Our handyman says he will do the floor after the custom cabinets are installed. This doesn't sound right to us, shouldn't the floor be finished first, then covered with a tarp, or something when the cabinets are installed?

You can do what you want...but reserve a final coat for after the kitchen is done. Floor sub is pretty much last one out, with only electric and plumbing trim out and paint touch up to follow.
