Does your kitchen get much natural light? Might want to use a tempered glass backsplash that will catch the light. You can actually brighten it up with any image/design on tempered glass too. We just finished this one for a small kitchen with limited natural light and the homeowner loves it.

There is only the one window (34.5") and I have created an open concept

I'm a sucker for aqua, but I don't like busy backsplashes, so I'd be tempted to use a very soft aqua glass subway tile for your backsplash, or alternately small glass squares, in a shade that matches the aqua glass flecks in your counter.
