How to finish barn wood?

I have some barn wood and want to make a high table. I know how to make the table, but not sure how to finish the top. Do I sand it smooth or leave it rough? Does sanding it make it lose quality or bring out color? I have used water locks on other furniture for finishing, is that the way to go for sealing it?

A Crew of Two
We made a table for my daughter, we used a wire brush to get off all the loose pieces and any debris. Then I watered down a gray silvery paint and sealed all the ends and any 'new' looking wood. Then sprayed the table with a matte polyurethane.
