Farmtable finish suggestions

I'm having a bleached oak farm table built and was wondering what is the best finish for a table that will be used everyday without placemats or coasters and by children. I do not want the wood color to be altered.

Rockin' Fine Finish
Waterborne finish if you don't want the color altered and still have durability but for best durability a conversion varnish is the best but the color of the wood will be enriched
