Kitchen Layout Options

I am here again trying to figure out what to do with my 'rental' kitchen! I am fairly limited because of a chimney that runs through the middle (you will see that fake brick paneling covering it), that I cannot remove (would have to be removed from the whole house as there are pipes in it). At this point, I am not renovating (that will be in a year or so) so I am looking for easy quick fixes. This used to be an eat-in-kitchen, but I enjoy cooking and really need the counter space. Since its my fiance's family home, I am free to paint whatever. I have a new fridge coming in about a month, and I am thinking of moving it to where the cherry hutch is(there is an outlet that will support that) and then possibly moving the buffet next to that. The room does get a lot of light in the morning. There is white 'fake' tile, that will be coming down with the reno in a year or so, but for now, I am thinking to just paint it a hi-gloss white and the tile that is on the wall with the window, the same color as the wall? I am contemplating painting the lower cabinets black, to match the buffet and the upper cabinets a light cream color. As much as I don't want to paint the wainscoting, I am thinking to paint the same color as the cabinets. The wall color I am looking at Benjamin Moore Edgecomb Gray.
