do you think you could successfully use

two of these lights over the same size island (ours is 10ft5)....just positioned evenly? Thanks for any advice in advance :)

Possibly, if you have enough layered ceiling lighting/recessed. It also depends on your ceiling height and natural light sources in the space. These pendants can be "spotty" in that they don't flood a wide surface area. (You can see how they wash specific areas of the countertop in this photo.) Hope this is helpful.
