Grass type & laying pavers

Hello, I'm re-modeling a motor court for a similar design, and had two questions:
1) Is this a specific type of grass that was planted for this project?
2) When laying these pavers, how was each square section kept together while the stones were tamped? It looks like grout in between instead of filler sand as well, but I'm not sure
