What are the pros and cons of sink vs. a stove top on nan island?...

It's a personaly preference. Some people like having the cooktop on the island, while others don't like to be 'watched' at the center of attention.

Another consideration, if the island has stools or chairs for people to sit at I don't like a cook top for safety reasons- a sink is so much better.

you also need to consider things like how will you vent the cooktop? ... can you easily get plumbing and drain vents to the island? ...

I'm in the process of a kitchen reno right now, and after considering both sink and cooktop on my island, I ended up putting neither there. The cooktop went on an exterior wall so that it could be vented out a wall (instead of through the ceiling), and the sink went under a window. My island is a storage and prep area, as well as seating for dining.

It can be located either place. Most people prefer the sink to be under a window. It may depend if you have a nice view, then would you prefer look at the view while your cooking or washing dishes?

If you place the cook top on the island and you have bar stools on the other side, then I recommended adding a 42" high upper counter top to protect from hot grease splashing on some one. This also creates and area for electrical outlets to be housed. Like these examples of kitchen s I have done.
