How did they achieve the jewel tone effect of the paint color? Did they use more than one paint color on the walls? If so, what colors were they and how can I reproduce this in my own dining room?

It's a single paint color - the variance in light and shadow naturally makes color appear different, which is why basing a paint color for your home on a photograph on a computer of someone else's home is ill-advised.

In this room, it could be the effects of the lighting. However, to achieve a similar look using paint, try a metallic paint or iridescent glaze. Dutch Boy has a product that can be tinted in a variety of colors. Here is the link: http://dutchboy.com/products/interior/wall/special-finishes/metallic/index.jsp
