Kitchen Remodel - under sink ugly

The outside of the kitchen is looking great, but when I open the cabinets under the sinks, they look like a kludge. Should backs of cabinets where the plumbing is be solid cabinet wood or should the backing be left off and the wallboard is finished? Are there any flanges or easy finishing pieces that can be applied around the cutouts? Or what? I really don't know how to make it look professional.
