House and Yard Reconfiguration and Remodel - Where to Start?

Hi All,
We have a 100 year old house that we love, but we'd like to do more to it. The kitchen is the room that can be improved the most, the adjoining office could be involved, AND both of those rooms are against the back yard, which is huge. In addition, there might even be the option of tearing off an old addition and adding a garage.
Our problem is that we don't know where to start. There are so many things that could be done, and we don't want to jump in and do something and decide later that we should have done something else. It would be nice to start with a plan and do things in phases.
A friend once told me that rather than hire an architect, we should hire a draftsman (?) - lower price, more ideas.
Any thoughts?
