How many pendants above island?

I have a kitchen island that is 8 x 3 ft. with a track light with 4 halogen bulbs. 9 ft ceilinogs. Since the island houses the cooktop, I need great lighting and my current track gives that. However, with the kitchen update I want to update the lights with industrial pendants and am thinking about Harmon (Restoration Hardware 15" diameter uses 100Watt bulbs), or Kichler Hatteras Bay (13.25" diamenter 150 watts). Should I have 2 or 3 pendants, and how far above the countertop/cooktop should the bottom of the lights be? Will 3 100 watt lights offer enough light in this highly used area? Please help!

3 pendants would be optimum to avoid overcrowding the island.

What is the wattage of the current lighting? I am guessing they are 4 x 50 watt or less. Maximum it should be is 4 x 75 watts if they are large track heads. 2 - 150 watt pendants should be sufficient. You can get halogen bulbs in a normal bulb style if you end up missing the crisper light of the halogen. A pendant directly over a stove could get pretty greasy and cleaning it might get old fast.
