finishing kitchen table

We just built this table out of salvaged legs from a table we bought at an auction and some old red oak boards that were cut with a portable band saw and left in a field for years--i LOVE the patina on the wood, it's light and grey and almost shiny from burnishing with a wire brush. But it needs to be treated some how so we can actually use it to eat on-and not worry about water marks or oil spots from spilled food. How do we maintain the color and look of the top and finish it at the same time? We have tested scraps with linseed oil and it makes it darker and yellower.

The room has natural white oak floors and I think the contrast (instead of trying to match) would look better.

Also open to possible painting the top with a whitewash, or something to make it look like it has been painted but the paint has faded?

No do not match floors to any furn. Love the look of table. People are paying big time money for the reclaimed wood look. If you want to change it up add fabric chairs in a blue gray. I don't think you can hurt his table. After all it spent years in the fields. I wouldn't want to change the color of it. I'm sure there is a way to seal it, without losing the look.
