Cabinet & Hood staining

How did you get your stain to come out without a ton of splotches? Did you use a preconditioner before staining? If so, what kind? Also, how many coats of stain did you use and what kind of finish? (polyurethane?) if poly, how many coats. I'm about to start on my new kitchen cabinets & i'm having an awful time on test boards with the splotchiness.
