Open plan = wasted space

We have a dysfunctional island, the back 11" of which is wasted space. It is too big to be useful and ends up collecting clutter. We also have what seems like an acreage between it and the pantry just off the front door. I was contemplating tearing the island down to the 24" depth of the cabinets and adding a perpendicular two-sided peninsula 6'x2' eating bar. Since I can't get the cabinets anymore that means I can't use cabinets as the structural base so I'm unsure as to how to support the butcher block counters. There is the dining area beyond the island but from the peninsula the views are amazing. Any thoughts? Or other ideas of how to use the space?
