It's not bamboo.

Latillas are the traditional material for Mexican ceilings, laid between Vigas (Beams)

Hi all! Yes the surface material between the beams are pine latilla sticks. This home is located in San Jose del Cabo Mexico and each stick was hand cut and laid. This material is available in sheets....refer to the source link above. It's very helpful.
