Remodeling kitchen - opening up to family room...Paint color?

Galley Kitchen - New: Oak flooring, Oak cabinets, Brentwood quartz countertop, Mojave tumbled travertine backsplash, swanstone sink. Love the colors in the Travertine - gray, cream. But how should I finish the walls?

Drywall would be the conventional route.
