Specifically, how high is the ceiling above the dog and what height does it slope down to. I have a low ceiling in my loft but I think that this could work for my home.

I have no idea,it's a good question! check on line for resources,I did these floors over 20 years ago,prefer over engineered floors because of thickness and can be refinished.
