We have consistently heard from granite sources that we should go with non-honed absolute if we don't want the "chalky" look, however, there are several examples on Houzz that show honed as a clean, dark, matte finish. We have been encouraged to use a different

With such a large island, were you able to find a piece of granite to fit the whole island or did you need 2 pieces? If you used 2 pieces is the seam very visible?
