I don't particularly like to eat eggplant (it's OK smothered in cheese and red sauce), but I do like to look at it. It's so rich and warm and confident. There is a reason it was once considered a royal color.
Often called aubergine (when you are trying to be French), eggplant isn't one exact color. It's a deep purple, sometimes reddish, sometimes bluer. It can be almost black or nearly gray. I like it as an accent and, to be perfectly honest, this entire article is inspired by my brand-new eggplant accent wall in my tiny, eclectic bedroom.
Here are several rooms boasting a little eggplant. Some are modern, some are lush and traditional. All are richer for it.

| A lighter, brighter version with matching throw pillows. This color is just a few shades away from magenta. Nice and vivid against the white. Sherwin-Williams' Kimono Violet is very close. |

Eggplant doesn't have to be relegated to accent walls. By all means, paint the entire room. Paired with a crisp white trim, it's absolutely beautiful.
Eggplant in the kitchen, where eggplants belong. This brightens up an otherwise nearly sterile modern roomscape. It's a gorgeous shade. Mature Grape by Sherwin-Williams is very close.

Another option would be to go with a warm ochre yellow (color guide coming soon). Eggplant and ochre look great together. The "white" next to my purple accent wall is actually a very, very pale warm yellow.
