For Cabinet Doors in Kitchen
The 'tall' cabinets have a flush toe. with trim similar to baseboard but that match the cabinets. If we do this we can have the trim at the top be the same as the wall cabinets. The 'toe' area below the cabinet will be about 6 1/2" high.
Here is another example of the flush toe.
You can see in this other picture of that same kitchen with the taller cabinets with the flush toes - that the main cabinets do not have a flush toe. If we make the cabinet with the 6 1/2" flush toe the trim around the top can all be the same, but as you can also see in some of these pictures; It looks good also when one side has larger trim than the other.
Another idea: the cabinets to the left are lower than the ceiling - we could leave the pantry cabinets down 2" or 8" then we could leave the toe's 'normal'. This picture shows the cabinet to the right to the ceiling as your wall cabinets will be.
Again this one shows one cabinet to the ceiling as your wall cabinets will be, but the others dropped down.
Idea number 3: when we remove the soffits: we could rebuild one (Only on the refrigerator / patry side), but smaller than it is now - it can be 2" high or 8" high similar to the one shown here.
This is another picture of a small soffit - if you notice over the refrigerator section it is just as deep as the cabinet trim, so it will not be as noticable as it is on the center and right side of this picture.
Last Idea #4 we could stack a small 8" cabinet over the pantry cabinets - this is probably the idea closest to your original idea - it just came to me. If we do this we can make them have regular doors where it just looks like the pantry cabinets have 3 doors high instead of 2 doors high - or we can leave them open shelves or we can put glass in them.
