Concrete counters. I wouldn't want them in white, but it's an interesting material and effect.
Porcelain counters--supposed to be new, beautiful, and kid-proof!

Absolute Black granite that has been "flamed." A commented has the "leathered" version and says everyone comments on it, plus it is stain- and scuff-proof.
Soapstone counters. Lots of examples in House Beautiful. Darkens over time and supposed to be very hygienic. Seek out slabs with less of a greenish cast because the greener they are, the softer the stone. Less green=harder material. Can be found in Virginia, see alberenesoapstone.com
Zinc counters. Supposed to be warmer and more versatile than granite.
Glazed basalt counters. Supposed to be very expensive, but looks very striking. One company that provides them is called Pyrolave.
Kliptech's EcoTop is a great example of this trendy, durable and eco-friendly counter material.
Recommended sealer for soapstone and paperstone counters. Food grade and no-VOCs.
