Historically, the grout would be a medium grey because dyes were not used in the aggregate. However, today the grout color is a personal preference. Using a white or light grout creates a uniform appearance where the grout lines fade into the tile visually

When you have to cut the tile to make them even like on the above picture
picture on the left side where you lined them up with the countertop, wouldn't the tiles be rally sharp? How would you finish edge like this? I've seen them finished with single little tiles placed vertically on edges but I don't really like the look. Is there a different way to go about it?
