The main thing to consider is practicality. For example, if you have kids and a lot of activity in your home, then honed marble is probably a poor choice as it will etch and mark up easily (for example, if orange juice is spilled on it). You can google different

I have been having a difficult time finding decorative stone this colour in this size. Would you mind advising the manufacturer of this? I assume its dry stacked but can't tell from this size picture
Thanks for the question. The stone is actually a native stone from Maine, often called Lincoln stone, and it is not a decorative veneer as such, but a good 4-5" thick, hand laid. it is not dry stacked, but mortared with a deep tool, allowing a sharp shadow line throughout
