Wood is certainly not he most resilient of materials to use on a counter top (neither is marble which was also used in the kitchen)... I have always found a lot of beauty in the way materials patina as they are used and age. I think a counter top with dings and stains speaks to the way it was used, and how people have lived around it, so I have no issues with materials "wearing"... If you want your counters to look like the way they were installed, then granite is probably a better choice.
