If you want this effect, but don't like the colour Martha used when you see it in real life, then I would either print the photo and take it to a paint store to select some samples, OR if you have a fan deck of paint colours, try choosing one that looks close to what YOU see on your monitor, OR, hire a colour professional to come to your house for a consultation, and they will help you choose the best beige/grey/cream/taupe shade for your space!

Trim/ moulding above the cabinets different? - Is the crown moulding above the cabinets a regular white dove and cabinets themselves have a smaller moulding with the glaze? It is hard to tell. I will have the same issue in my kitchen. Also, thank you for always replying to so many questions, Martha. Your work is gorgeous and you help so many people with your advice.
