I think both would light the space fine. So it is a matter of personal preference.

If you have two sinks and have a light over each sink I would use a 2 bulb fixture.
If you have one sink and one fixture I would use a 3 bulb fixture---that is strictly my opinion

The sink is 36.25" this is a standard cabinet height of 35" plus 3cm granite. The sitting area is 30." I recommend 28 to 31 for these depending on the chair you will use. If you are using a laptop on a space like this I would go closer to 28" to save your wrists

It is a custom blend so I can not really give you a solid answer. But using minwax stain colors it is very close to Ebony
