This helps a lot. I have six kids, so our countertops see a lot of action. I know there isn't any one perfect surface. We have a price that we absolutely can't go over so we're getting samples of walnut butcher block and a dark color of Corian and will decide from there. I am fine with oiling countertops if we decide to go with walnut and love the idea of our family putting our own patina on the countertops, but am nervous about the wood getting majorly damaged, even if I try to maintain it. I'm nervous about the plastic look and feel of the Corian, and scratches showing white, but the durability and ability to sand out any major scratches sounds good. Your pictures and responses have been very helpful. Thank you!

Be careful who you select to do the wood countertops. If they are not done right they will not hold up and will be high maintenance. As soon as the wood dries out you have to make sure and apply more top coating to it. Whether it's a Rubio Citrus Orange Top Coat, waterlox or whatever else the fabricator you select uses. Regardless, wood is a higher maintenance product. If you are price conscience wood, particularly Walnut, is not cheap. I know it runs around $110 a foot for a 1 1/2" thick piece. Have you considered Ceaserstone or Silestone as options. These are natural quartz products, are reasonably priced, durable and low maintenance. May want to check those two names out online.
