dandmchristensen When we remodeled our kitchen eight years ago we put in a maple butcher block island and I was worried about wear & tear too. I had read that maple wood has some anti-bacterial properties, though I can't verify that of course. But I do love my block! It gets heavy use in my kitchen for kneading bread dough, making pasta, rolling pie crust and cookies. It is a cardinal sin for anyone to allow meat to touch my wood, and I generally chop vegetables on a different surface, but it really isn't difficult to upkeep. As long as you never let water sit on it for long and oil it occasionally it wears beautifully (I don't do mine monthly, maybe quarterly or twice a year. I live in a humid climate, which might help). I lightly spot sanded it once with ultra fine grain paper to remove a red Kool-aid stain from my children. All in all, my block looks as good as it did when we installed it. No cracking , splitting, swelling, etc.
