It's easier and a more economical use of the stone to allow it to turn the corner and have it joined in a straight line front to back.
An angled cut results in an amazing amount of waste.

It depends on where you want this installation to take place. We have it here in our showroom on a bullnosed decorative moulding we installed around a column-see pic.

I assumed you meant the run of the counters rather than the built-up edge - which i've only ever seen done on the flat, regardless of the edge profile.
