The floor grinder would grind away all remaining mortar or glue and then they could stain the concrete and then the concrete is polished. It could be $10-$15 per square foot depending on the layout and complexity, etc -- lots of work, but beautiful...
Actually hate the floor - but liked the idea of a dropped wood ceiling, seeing as thought you want concrete floors. I really think that you should add wood features throughout the house to offset the coldness/hardness of the concrete.
